Tamborine Cheese, famed for its award-winning artisanal cheese, is opening its artisanal deli at Portside Wharf.
Founded by cheese aficionado and milk technologist Cristian Salvati the store will offer more than 40 varieties of locally crafted cheese, a curated selection of cured meats and customisable cheese boards designed for the ultimate gourmet experience.
With a background in food technology and more than 15 years of industry experience, including managing large venues, Cristian founded Tamborine Cheese in 2019 and has spent the past five years building it into a brand synonymous with quality and craftsmanship.
“We’re thrilled to bring the taste of Tamborine to Brisbane,” says Cristian. “Our cheeses are handcrafted in collaboration with over 150 local Queensland farmers, and every product we offer—from our cheeses to our cured meats—celebrates authenticity and quality.”
At the new Portside Wharf location, visitors will be transported to the mountains without leaving Brisbane.
“We’ve had so many requests from people in Brisbane asking where they can buy our cheese. Now, they won’t have to drive all the way to Tamborine Mountain—they can get the full experience right here at Portside Wharf,” Cristian says.
For those seeking a perfect pairing, the store will feature a selection of wine and cocktails, crafted to complement the customisable tasting boards.
“One of the unique features of our store is the customisation,” explains Cristian. “You can create your own cheeseboard and try as many cheeses as you like—whether you prefer a selection of ten cheeses or a mix of cheese and meats.”
Originally from Naples, Italy, Cristian’s expertise stems from a rich heritage of artisanal cheesemaking. “In Naples, I grew up with cheeses like burrata, buffalo mozzarella, and stracciatella, so it’s always been my dream to bring these traditions to Australia,” says Cristian.
Tamborine Cheese at Portside Wharf will be a destination for food enthusiasts seeking authentic experiences. Knowledgeable staff will guide guests through the different flavours and textures of each cheese, offering insights into the unique qualities of each product.
“Our boards are not your typical charcuterie platters—they’re an authentic experience. Each one tells the story of local farmers and traditional methods. It’s a celebration of Australian produce,” Cristian says.
With seating for 30-50 people, including outdoor and indoor areas, the venue will also offer a healthy breakfast menu featuring house-made yoghurt, fruit, muesli, and barista coffee—perfect for those seeking a nutritious start to their day.
