The arrival of summer and the lead up to the festive season has prompted a totally new menu at one of Brisbane’s most popular eateries, Restaurant Manx, at Hamilton’s waterfront precinct of Portside Wharf.

Head chef Terry Uhlmann and his team have been busy identifying what fresh local produce will be available over coming months and have carefully crafted a new menu to best highlight and present that produce.

“The winter blues are gone, summer fashion is in and healthy eating and social gatherings are the flavour of the season so we wanted to create a menu that reflected that,” he said.

“What we now have on offer is an increased selection of dishes which will have appeal to a broader clientele.”

Chef Uhlmann said the Restaurant Manx signature summer dish was the Tasmanian salmon fillet with rice cake, choi sum, wombok, edamame and wasabi cream sauce.

“It is light, healthy and has a touch of kick from the wasabi cream sauce,” he said.

“A perfect summer dish with a chilled glass of whatever you fancy and one that is sure to be extremely popular.

“For the sweet tooth the chocolate brownie with chocolate mousse and Ferrero Rocher ice cream is a favourite – it’s rich, luxurious and presents beautifully.”

Restaurant Manx prides itself on the broad selection of dishes that it has on offer and the new summer menu continues that tradition.

The menu features dishes like the pineapple glazed tiger prawns with avocado, tomato and charred corn salsa and spiced cucumber oil; braised pork belly with kim chi, orange sago and fried shallots; lamb rack with soft polenta, pearl onions, green beans, parmesan crumb, rosemary and mint jus; and meringue with passion fruit curd, berries and pomegranate molasses.

Chef Uhlmann said summer and the festive season were all about sharing good food and wine with good friends and family.

“Restaurant Manx presents the best locally produced fare available in an unpretentious manner so our diners get maximum satisfaction and choice,” he said.

“We look forward to the changing seasons as it gives us a chance to start afresh and create new quality food offerings that excite and satisfy our customers.”

Restaurant Manx is one of Portside Wharf’s many waterfront restaurants with views over the Brisbane River.
