Fresh, seasonal ingredients are being incorporated into the new menus being launched at restaurants across Brisbane’s premier waterfront shopping and dining precinct – Portside Wharf.

Seafood is featuring heavily this season, with the new spring/summer menu at Moda Events boasting an array of delectable dishes including the freshest seafood sourced purely from sustainable fisheries.

The popular riverside ding venue, sources all seafood from the Marine Stewardship Council (MSC), which is endorsed by leading Australian chef, restaurateur, author and television presenter, Neil Perry.

According to Moda head chef Stephen Nardo choosing certified sustainable seafood matters.

“At Moda, we place strong importance on quality produce, which be believe is evident in our menu,” he said.

“Although sourcing sustainable fish is three times the price of farmed fish, we believe that it is a long term, worthwhile investment for the industry.

“At Moda we offer a superior waterfront dining experience and we are committed to purchasing seafood through organisations that are looking after the future health and productivity of our oceans and sustainability of seafood supplies into the future.”

Tuna, salmon, prawns, cuttlefish, whiting and barramundi all feature on the menu and Stephen says it is difficult to pick a favourite dish as the new menu is bursting with incredible flavours and delicious combinations.

“One of the highlights of the season’s menu is the Tasmanian salmon confit, served with Provencale vegetables, mimosa dressing and goats cheese filled zucchini flowers,” he said.

“The roasted sea bass is also a winner. Served with prawns from Western Australia, sauté potato, double smoked bacon, pedro ximenez vinegar, it is an exquisite fusion of flavours.

“The new menu also contains an extensive list of red and white meats, including braised duck cannelloni and pork loin with pancetta and crackling, so guests will be spoilt for choice.”

To finish off the meal, a selection of fresh, decadent desserts are on offer including Rhum baba with lemon sorbet and glass biscuit, treacle sponge with marmalade ice cream and anglaise, and the family favourite ‘at the movies’ dessert – a chocolate ice cream sandwich with caramel popcorn, fudge sauce and rocky road.
