Belvedere Bar and Grill has appointed a new head chef to add a touch of European flavour to the popular riverside restaurant at Brisbane’s sophisticated dining precinct, Portside Wharf.

Situated on the river at Hamilton, Belvedere combines stylish dining with casual eating, which is a concept very familiar to accomplished chef Martin Thewlis – known as Wal.

Originally hailing from Leeds in Yorkshire, Wal brings a wealth of experience to the table, with a cooking career spanning more than 20 years.

Wal’s career began when he was nearly 14 and he has never looked back.

Over the last six years he has been behind the success of a number of popular Brisbane restaurants including Kingsleys Steak and Crabhouse, and most recently head chef at Moo Moo’s in Brisbane City.

Wal says he intends to add his own touch to the menu at Belvedere, which is fast becoming one Brisbane’s most loved waterfront dining establishments, and he is committed to maintaining the diversity and flexibility that owners Cosimo Carvignese and Gianni Greghini have executed so well.

“I plan to implement more of a European feel with some classic French dishes, but rest assured, guests of Belvedere will continue to be spoilt for choice,” he said.

“Cosimo and Gianni have captured the perfect mix of style and comfort in an unparalleled location and with access to the residents living in the luxury residential apartments, patrons of Dendy Portside and shoppers that frequent the boutique retailers across the precinct, we have a captive audience.

“They have created an environment conducive to a sumptuous sit-down dinner, a corporate function or a casual drink and plate of nibbles on the huge outdoor timber deck – the perfect spot to relax on a Sunday afternoon.

Belvedere is not about fine dining, nor is it your average steakhouse and Wal says it is the approach that stands out to him.

The fresh new menu will kick off this month (April), along with brand new Sunday happy hour specials.

Guests can also enjoy a two-course lunch with a glass of house sparking, white or red wine for just $39.00 from Monday to Friday.
