Just a few of months after taking the reins at Belvedere Bar & Grill, head chef Joseph Martin has started to put his internationally-renowned stamp on the menu.

Heading up the kitchen at one of Brisbane’s best waterfront restaurants, Chef Martin has been working closely with suppliers, researching local produce in search of the best quality, in-season ingredients.

Martin says he is methodically revising the lunch, dinner and bar snacks menus to cater for different markets and offer more nutritional dishes.

“A restaurant menu is more than just a list of food with prices, it is a reflection of our restaurant’s style and concept, ” he said.

“It is not something to be hastily thrown together, but rather an important element that should be carefully considered and systematically reinvented.

“It’s not just about creating individual dishes and listing them – it’s about creating a well-rounded offering that caters for all guests while complementing the other dishes on the menu.

“Once the dishes have been created, careful thought goes into description, layout and pricing.

“It’s a very in depth process and one that I am taking very seriously and not rushing.¬† The menu is an ongoing project that will evolve over time.”

According to Martin, the most popular dish on the menu is the rib platter.

“Our rib platter is a big favourite at the moment which features beef, lamb and pork ribs,” he said.

” I have realigned¬† the cooking process of the ribs and spent hours redefining the sauce to boost the flavour.

“It’s one of my signature dishes and something I encourage everyone to try.”

Belvedere sits along the Brisbane River at the boutique retail precinct of Portside Wharf and houses the trendy white bar featuring Belvedere vodka and 11 beers on tap. The huge 110sqm deck overlooks the river with a 40 seat dry bar and selection of lounges and dining tables for all to enjoy a snack, beer, glass of wine, champagne or just to take in the view.
